- Doors self-closing where required; all windows screened
Back door shall be repaired to self close completly. Repair door jamb.
- Non-food contact surfaces clean
Clean shelving, table legs, and container for utensils.
- Hands clean and properly washed
Employee was working on the drain for the ice machine and went back to food prep without washing hands. Employees shall wash their hands thoroughly in a hand washing lavatory before starting work, after smoking, after each visit to the toilet, and as often as may be necessary to remove soil and contamination. Employee was made aware of the situation and washed hands.
- Floors, walls, ceilings properly constructed, clean, in good repair
Floors, walls and ceilings shall be repaired. See #21 in the transitional addendum for details.
- Toxic substances properly identified, stored, used
GC Chemical bottle was found unlabeled. Label all chemical bottles with the name of the contents inside.
- In-use utensils properly stored
GC Rice spoon was sitting on top of rice. Spoons, spatulas, dippers, and other in-use utensils shall be stored between use in the food product with the handles extending out of the food, stored dry on a clean surface or in a container of water if the water is maintained at a temperature of at least 135F. Recommend cleaning in use utensils every two hours or swap out utensils with clean ones every two hours. Also, clean and sanitize the surface these are stored on every two hours.
- Thermometers provided and accurate
GC Thermometer top was cracked and read 40 F in an ice water bath. Replace thermometer and calibrate to 32 F in ice water. Use thermometer often for checking food temperatures.
- Meets illumination requirements; shielded; lighting & ventilation clean & in good repair
GC. Lighting is better but is still low at 43 f/c under the hood and low at the prep sink and 3 comp. sink at 37 f/c-52 f/c. Provide 50 f/c at all food prep surfaces and at utensil washing station. 21 f/c is provided in the storage area and is now considered in compliance. See #18 in transitional addendum for further details.
- No cross-connections
Ice machine hose was located inside drainpipe and is considered a cross connection. Owner cut hose during inspection. A two inch air gap is required between the drain and the hose. This shall also be repaired to positively drain. Repair the prep sink pipe for the 2 inch air gap also.
- Proper reheating procedures
Rice was taken from the refrigerator and put into the warmer without properly reheating. Rice was 100-120 F when checked. Employee reheated food on grill top during inspection. Rechecked on warmer at 187 F.
- Food & non-food contact surfaces easily cleanable & in good repair
Rusted screws in the ice machine need to be replaced with approved screws. Repair leak inside ice machine. Replace shelving that is rusted. Replace unapproved rice cooker that is for domestic use. Repair items listed in the addendum for the transitional permit need to be brought into compliance. Copy of addendum along with first letter was signed and given to owner.
