Condensation was found on the packaging of several products in the walk in freezer. As condensation is considered waste water food items should not be stored under leaking or damaged areas of the walk in freezer until the leaks can be repaired.
- Floors, walls, ceilings properly constructed, clean, in good repair
Detailed cleaning is needed on the floors below equipment and shelving along baseboards and in corners.
- Food contact surfaces cleaned & sanitized; approved methods and sanitizers
Detailed cleaning is needed on the interior of the rear ice machine. Floating debris was found in the sanitizer solution in the buckets at the time of this inspection. Properly clean surfaces before sanitizing them and change the sanitizer solutions more frequently. Be sure to completely submerge all utensils in the sanitizer solution for at least 2 minutes in the 3rd compartment of the 3 compartment sink. Several utensils were found stacked above the water line. The sanitizer solution (quat.) was too strong (above 400 ppm). The approved range for quat is 200 to 400 ppm.
- Proper cold holding temperatures
G.C. A pan of sausage gravy was found sitting on the counter at 78 to 80 F at the time of this inspection. This item was immediately discarded by the manager. All food items being held cold must be held at or below 45 F.
- Handwashing facilities provided
G.C. Both rear hand sinks were out of soap at the time of this inspection. This was corrected by the manager.

G.C. General cleaning is needed on the tops of equipment, and the interior and door gaskets of refrigeration units.

G.C. Repair the leak below the rear hand sink.

Replace the torn door gaskets on the reach in refrigeration units throughout the facility. Repair the stand up reach in cooler near the biscuit making area as it is not cooling properly. No food items were found in this unit. Repair the leak below the rear ice machine. Repair the condensation leak in the walk in freezer.
- Hands clean and properly washed
Several employees were observed moving between tasks (cleaning and food prep.) without washing their hands. All employees must properly wash their hands when moving between tasks and upon re-entering the kitchen.

Several items were found stored on the floor in closets and the out side storage area. Keep all items in storage above the floor on approved shelving (6"" if mobile and 12"" if stationary) to facilitate proper cleaning.

- Proper hot holding temperatures
Four trays of steak patties in hot holding were holding the product at 115-128 F. All potentially hazardous food must be held at 135 F or above in hot holding. An employee disposed of all food voluntarily.

GC- minor cleaning is needed in corners underneath equipment.

GC- one handwash sink in the women's restroom wasn't working and needs repair. Maintenance has been called.

GC- one quart of eggs were 58 F in an improperly constructed ice bath. Potentially hazardous food must be held at 45 F or below in cold holding. Ensure that there is enough water in an ice bath so that the food can sit down in the ice as far as possible. An employee disposed of the quart voluntarily.
- Non-food contact surfaces clean
GC- some door gasket cleaning is needed on coolers.
- Insects, rodents, and animals not present
GC- there were three dead flies on top of the soda fountain ice machine on the front drink line. Contact pest control about problem.

Improvement is needed on washing pans. One tea urn nozzle needed cleaning. Ensure that the sanitizing solution in the buckets are changed out more often as the water is cloudy.

Move all storage onto approved shelving in the storage rooms.

Some improvement is needed on air drying pans.

The bottom row on the hot holding machine (steak patties) is not working properly and needs to be repaired. The walk freezer has some frozen condensate on the ceiling and needs to be checked. Replace any split door gaskets.
