  • Basic - Pizza pans/screens not cleaned at least every four hours. Observed establishment currently using pizza oven as a method of high heat sanitizing the pans after removing excess food debris. Observed establishment using cast iron pizza pans. Inspector phoned Supervisor who stated that even though they are cast iron, pans shoulda be washed, rinsed and sanitized at least every 4 hours during use.
  • High Priority - Employee rubbed hands together for less than 10-15 seconds while washing hands.
  • High Priority - Vacuum breaker missing at hose bibb. Observed on exterior wall, right side when facing establishment from the street.
  • Intermediate - Hot water not provided/shut off at employee handwash sink. Observed at handwash sink at front counter. Manager stated that a part needs to be replaced in the hot water faucet and the water had to be turned off.
