Mayo is my all time favorite condiment. I think I could probably eat it on 90% of food out there.

Mayo and beef is awesome, I eat it all the time. Roast beef and mayo is my favorite sandwich.

Nah, "trendy and cool" would be to ignore your sense of taste and put ketchup on a hotdog to be rebellious and stick it to the man. Not putting ketchup on a hot dog is just a longstanding culinary norm (for good reason). It's about as "trendy" as not pouring orange juice on your cereal.

A solid disk of meat with nothing to spice it up is worlds different than a sausage that has about half a dozen spices / herbs in it. Even Oscar Meyer smokes their pathetic franks a bit and the better dogs go through a roasting process that is closer to making barbeque than anything that McDonalds or Burger King do...

Is it trendy to not douse oriental food is soy sauce? Did you ever eat in place frequented by folks that grew up in a house where Chinese / Thai / Korean / Japanese was seasoned in the kitchen? They might drizzle a little light soy / tamari over steamed dimm sum, it supposed to enhance the flavor not mask it.

BTW Good mayo is an excellent "salad dressing". If you are making a side salad (like potato or cole slaw) or a sandwich filling (like ham salad, tuna salad, egg salad) it is tops. If you are making a sandwich like a sub with cold cuts mayo rarely is better than a nice squirt of on oil and herb based dressing. On a classic BLT or "club sandwich" mayo serves to keep the bread from becoming soggy, and adds a nice zip. If you are doing "poker night" sandwiches with just meat and bread mayo is OK, but something like a good horseradish / mustard give much more characterr. A Chicago beef is HOT and needs mayo like pasta needs to be washed...

And by the way, an article in the Tribune about 13 years ago with a coffee buyer for Dunkin Donuts said the proper way to drink coffee is with a little sugar and cream. But I'm not going to call those who don't ones with childish tastes. Next you're gonna tell me that I need to eat my Sauerkraut and Red Cabbage, vinegary instead of sweet and sour and that will cause me to hunt you down! This is as stupid as the vinegar cole slaw vs. mayo cole slaw argument.

Hey I remember that article about the Dunking Donuts tasting guy. Makes perfect sense. DD roasts their blends for consistency AND as a helluva good accompaniment to a nice donut. You don't go their expecting some small business and his family to have a selection of estate grown coffees that they'll put in a single cup pour over filter for you. And you don't see the kind of fake strawberry frosted donuts serrved at Intelligenstia or a pacfic northwest coffee shop. Different product.


On the cole slaw thing how about this -- would you ask for some Hellmans to improve your kimchee are a Korean place? (though I gotta say the vinegar stuff from White Fence Farm is awfully nice complement to the golden chicken and fritters and seems a lot lighter than the very tasty but mayo based kidney bean salad...)

Float a nice smaltz laden matzo ball in a bowl of Pho???

Salt? What about fries? In the bag or wrapped with the dog? Shoestring thin? Rippled? Skin on? Waffle cut? Sweet potatoes? Tater tots?

Ketchup is a food - the federal government says so.

Only thing that goes on my hot dog is brown mustard and sauerkraut - except for when I visit the Portillo's outpost nearby and have the thing dragged through the garden.

Ketchup on a hot dog - or mayo on anything? NEVER!
