Population density and building density don't neccaserily go hand in hand.
It looks like FLs population centers are more evenly distributed across the state compred to texas where they're mainly on its easten half.
Gee, and I thought that the arid, mountainous landscape and dry climate would have no effect on the population distribution in West Texas compared to the more lush East Texas. Try having West Texas' landscape in West Florida and see if that doesn't affect FL's population distribution.
Thats an opinion
And thats exactly what IMO, In My Opinion, but trust me, the majority of people prefer TX's buildings over Florida's.

Houston has it all....
4th Largest City in America.
2nd Largest Vietnamese American population in America.
3rd Largest Mexican American population in America.
HUGE Chinese, Filipino, Indian, and Korean population.
Decent Japanese, West Indian, and Arabian populations.
The historic city of Galveston(located within the metro area) with it's historic Victorian, and Mexican inspired homes.
Nice subtropical climate, insignificant amount of snowfall every four or five years.
Palm trees line the cities coast, while pine trees dominate the north, live oaks have that "southern feel".
Plenty of attractions like the Houston Zoo, Johnson Space Center, Schlitterbahn, Downtown Aquarium,
Moody Gardens, 3 museums, Galveston beach, and the Galleria(7th largest mall in the U.S., largest in Texas).
In addition to churches, there are mosque, and several HUGE Buddhist temples in asian communities.
Great place for gardening being in subtropics, anything from azaleas, and roses, to royal palms and mangoes in Galveston.
Great fishing.
For music you've got the Houston Symphony.
Houston is home to Rice University.
Much better health care then Florida by far.

Texas is the most varied state in the U.S, you can't generalize it. We go from blizzards in the north, to sitting under coconut palms in beach weather, during winter.

Cities:

Miami > Houston
Orlando =~ Dallas
Tampa =~ Austin
Ft. Lauderdale > Ft. Worth
Jacksonville =~ San Antonio

Scenery: Florida is where people from all over Europe and Latin America go vacation, Texas is for the most part boring by all means. Need I say more.

Fine dining: Palm Beach>Houston>Miami

Miami is more diverse than Houston by a long shot. Full of Europeans from Italy, France, Germany, Spain, etc in Miami Beach, Houston has very few.

Education:

Rice > UMiami (not by much)
UT-Austin > UF (not by much)
Texas A&M > Florida State
USF and UCF > Texas Tech
FAU > For location being in Boca Raton better than any other school in TX

Probably every single beach in FL is nicer. I mean every one from Pensacola, around Miami and up to Jacksonville.
