I think it covers that off taste that can come with cheap meat production. The modern meat raising methods affect the taste greatly to me. There is barely any flavor in modern meat compared to more traditionally raised meats. Did you notice that ever? So strange.

i used it to lose some weight when it waqs popular and it works. But the probelm is tht is not goig to be a life style eating chnage you stick withthat emans staqying at that weight. It is just what is says if you rad his origanl book.detrved from sutdies in pople who went on hunger strikes and adopted to lose fat quickly.

I was thinking more of one you could make yourself with the bacon of your choice. However, you're right about the nitrates as I'm not convinced there are any that are truly nitrate free. If it's cured in celery powder, it's got nitrates.
