Your homeland of Italia seems like the best bet, maybe Turin?
The problem with Italy is its taxation. They will take a big part out of my salary, even if it's earned outside of Italy. Not many people know that Italy has one of the highest income tax rates in the world. And not many people know that Italy is expensive as well. I'm talking about London-like expensive, at least the big cities

We lived there for some years !
Security payments for everything you need (utilities, phone, car lease, etc.)
Tax rate of close to 35% (at least it was for me !)
Bloody expensive to say the least (!), especially when the OP already said that her income would not be adjusted for the local Standard of Living.

Ireland has very low tax rates. Thats why even all these big companies have come here because of our low taxes and Dublin is very affordable especially property now. You could get a house of €150,000 today but five years ago it could of cost €700,000.
Yes it needs to be within Europe.
Switzerland may not be the ideal place for its very high cost of living. I live in San Francisco now, which has arguably one of the most expensive housing markets in the world. Definitely more expensive than Switzerland's as well. So I should still do ok over there, but if I can do even better and live more comfortably in another country, then why not. Of course affordability is not the only aspect I'm looking for, that's why I'm not really considering eastern Europe very much.
Dublin... could be fine but I can't stand cloudy skies all the time
I grew up in Italy and I now live in California. I'm "spoiled"! I think I'd rather have the German type of weather than the Irish. Sure it'll be colder in the winter but I'd also get 30-35 C or more during the summer. And considerably more sunshine I believe.
Since sunshine seems to be important to you, here is a map showing the hours of sunshine per year.
Thanks Neuling, interesting graph. Didn't know northern Germany or Sweden had more hours of sunshine than the UK.
I will keep looking into this. I sure have a lot of homework to do, but this won't happen before the end of the year so I'm not in a rush.
