The porkchops were not a hit with the girls.... but they ate them bathed in BBQ Sauce.... need a quick meal for tomorrow night..... veggie tacos?? Maybe.....

We had shrimp fettuccini angel hair spaghetti alfredo with a salad on the side. Used up 3 different pasta containers.

Thanks Satx56. I have some sugar free marshmallows and brown diabetisweet so I may give it a try.
Last night we made two dishes because I honestly believed that my hubby wouldn't like curry. We had chicken curry, brown rice, and wilted spinach. Hubby surprised us and although it was not his favorite, he had seconds. We also made southwest chicken breast. A boneless skinless chicken breast browned in a pan, topped with cooked onions, green chiles, and cheese, then finished in the oven until the chicken is done in the center. My daughter did most of the work. We also made a sugar free pecan pie. She was so disappointed because it really doesn't take the place of the real thing. It was more like a custard with pecans in it. I liked it though. The crust turned out great. I made it with carbalose flour and lard(daughter is afraid to make crust). It was nice and flaky. We think we'll use that recipe for a pot pie in the future.

Tonight I made Panko breaded chicken cutlets. I roasted turkey wings and made my gravy for Thanksgiving, so added cherry tomatoes, garlic powder and Italian seasoning to a little gravy and topped the baked cutlets with roasted potatoes and corn.

Went to the egg farm today so fixed bacon, eggs and toast with homemade apple butter. We had cherry Jello for dessert.
