It's Monday here now but Sunday night we had "Shrimp Monica"..a variation of "Crawfish Monica", one of the most popular dishes at Jazzfest in New Orleans. Hubby raced back for seconds, that made my week.
Tonights' dinner will be Beer Can Chicken with home-made 'tater salad. (I use dill pickles, a good mayo, eggs, spring onions (shallots?) and dill in mine).

I had a busy day so I ended up making chicken marsala over egg noodles. The other day's chili didn't quite last 3 days because I took some to my parents. I often double recipes and take some down because I don't think they eat right. Mom doesn't really like to cook, and she's not very good at it (). I doubled up the chicken marsala tonight as well, and took that to them. I try and cook something that is easily transported at least twice a week for that reason.

(Well, that and the fact that after growing up in a large family, I don't really know how to cook for just me and my husband )

Tri-tip roast beef slices covered in gravy, roasted finger potatoes and corn mixed with sliced string beans.

I'll be making either lasagna or stuffed shells tonight. Either will have meat and spinach....it will just depend which we feel like later...majority rules. My container of Ricotta broke open on Saturday ....so I need to use or lose it...I'm not for losing Have a great day everyone! This is the start of a great week!

It's rainy, cold and miserable here so we are having Pea soup and salad...I think I'll make grilled cheese for the husband and kids (they like to dip grilled cheese in soup).

Don't you love being sick all weekend but feeling better in time for Monday morning? I'm still tired but a lot better.

I think I'll make chicken tortilla soup tonight, served over big wedges of those always perfect costco avocados. In nod to diet, no cheese on mine, and tortilla crisps will be made by dry toasting strips of corn tortilla, not frying.
