We started this years ago because my step-kids, teens at the time, would not eat veggies, other than lettuce or carrots with ranch dressing. At least fruit supplied some of the stuff they needed!

We had take out Fried chicken tenders (strips)w/gravy, fried okra, Mac-n-cheese and rolls! Good stuff!

We had crawfish etouffee with alligator sausage that I cooked this afternoon. Same as my shrimp etouffee recipe but used crawfish in place of shrimp, plus you can leave out the sausage if you're cooking for Lenten.

Crawfish Etoufee with Alligator Sausage

1 stick of butter
1 medium onion, chopped
1 bellpepper, chopped
1 cup celery, chopped
3 green onions, chopped
2 tbls minced garlic1/2 tsp ground tyme
1/2 minced fresh parsley
3 tbsp worcestershire
3 bay leaves
1/2 tsp black pepper
salt to taste
1 tbsp baking soda
1 tbsp tabasco sauce
2 tbsp flour
1 28oz can Cento tomato puree
1/2 can water
1 lb Louisiana crawfish tales
1 lb alligator

In a large cast iorn skillet brown sausage, remove and slice about 1/3" thick.
In the same skillet saute over medum high heat onion, bell pepper, celery, green onions, garlic in butter until wilted.
Add flour and cook until lightly browned. Add tomato puree, water, worcestershire sauce, tabasco sauce, sausage, baking soda and seasonings.
Reduce heat and simmer, stirring about 30 minutes. Add crawfish and cook until pink, about 15 minutes.
Serve over steaming hot long grain rice

Funny you should say that...I'm 18, in college and I LOVE veggies & fruits. I eat veggies that my parents don't even eat like spinach, broccoli, kale, peppers, tomatoes, ect. Even when I was little though I was OBSESSED with carrots...I'd eat bags of them. For breakfast if you gave me a choice between a poptart & some berries with yogurt, I'd choose yogurt and berries, HANDS DOWN. Lol. Do they still eat well now that they're older?

I had a buy one-get one free coupon from Jack in the Box for their Sourdough Jack sandwiches, so that's what I got. I drank a glass of iced tea to go with it.

So, one of the local grocery stores had their weekly sales thingy out in the mail, and there was a photo of chicken tenders. They looked delicious -- all breaded and yummy.

When I went to the store, though, I couldn't find them. The circular said that they were in the meat department (duh!) so I asked the butcher. He walked me over to them. Them being chicken breasts (raw) cut up in tender-sized strips, all neatly packaged in a styrofoam tray.

But where's the breading? And the actual cooking???? I asked him.

He laughed and told me that I had to do that part myself.



False advertising!

I bought them anyway.

I'll panko-bread them tonight (thanks Miaiam and Nic for telling me how to do that without leaving all the panko on the pan after cooking ) and make some sort of potato product to go with it. Maybe roasted potatoes. Yeah...
