I have about 5 minutes before my penne is Al Dente but here is what I'm having with it:

A homemade pasta sauce -- I use rotel canned diced tomatoes with green chilies, to that I add pasilla and red bell peppers which I have roasted over an open flame to bring out their sweetness.

I also saute red onions and mushrooms in butter and olive oil and red wine, mince up some garlic, throw it all together and cook for about an hour and then at the last minute toss in some fresh oregano and then toss in the penne and finish with parmesan cheese.

Times up..got to go check my pasta ! Bon Appetite

We just had beer battered fish fillets, french fries, spinach, and cut up watermelon! A good dinner for a hot summer night. Hot! Hot! Hot summer night!

Sounds good!

It's hot here too, so I'm taking the easy way out we're just having quesadillas!

Footlong Chipotle chicken sub from subway. Super awesome. Had an apple and a yogurt afterwards.
