One of my local supermarkets was having a sale on Marie Callender's frozen dinners, so I stocked up. Tonight, it's Salisbury steak with potato wedges and a side of cheesy broccoli and cauliflower.

Beef w/Bok Choy, Peas, mushrooms, green pepper and Kung Bow Chicken.

I've always cringed at the idea of adding peanuts to a cooking dish, but tonite bravery took over, the Kung Bow Chicken only required 2 Tablespoons of crushed peanuts, along w/ green peppers, mushrooms, chili sauce, bamboo shoots.

I was pleasantly surprised, and now I've overcome my fear of adding peanuts to a dish!

Sorry I have been MIA my foodie friends! Yes, we still eat dinner but I've been so busy working online and dinners have suffered because of that and because it's been so hot!. Last night was perogies, sliced tomaotes, creamed cucumbers and garlic toast, Wed. night was pizza I picked up at the deli and cooked here and Tuesday night was turkey sandwiches. Cooking is about the last thing on my mind with this heat even though I have a/c and the house is cool. For some reason I'm just not very hungry and that makes even thinking about what to make hard much less cooking it too! But poor DH needs to eat so I'm trying! Not sure about tonight's dinner yet but will try to get back and post it later!
