Had a request to post the recipe for the chicken pesto casserole I made yesterday, here it is!

I had Peruvian chicken and leftover pizza in mind but just ate an entire box of Belgian cookies today... 1000 calories with no work out today. Might have to skip dinner or only eat a bite or two!
