Goat cheese is trendy now?
For me it was the epitome of 80's yuppie food; I learned about it from that bible of Baby Boomer cookbooks, the Silver Palate.
Well, everything old is new again. And I love its tangy flavor, especially combined with portabella mushrooms (we had hot portabella sandwiches with chevre two nights ago) or homegrown tomatoes. Or feta is always good, too.

Last night we made chimichangas with leftover turkey. They came out pretty good. We made fresh guacamole, avocadoes are on sale right now.

Tonight will be some sort of grilled fish, perhaps with a mango/jalapeno salsa, not sure.

try one of the cheeses labeled "chevre" with or without herbs, that should do the trick, goat cheese is wonderful. I have been eating it since I lived in Europe in the early '80's

I wanna come over for dinner! I sooooo miss that! We had a large Italian community in St Louis, I really miss the wonderful ethnic communities, there is nothing here but blah.

Tonight I'm making a beef stew. I haven't done this in a long time so we'll see. Just sounds good cooking through the day and warming the house with good smells!! It's really cold today--13 degrees right now!
Lots of espresso!
