Dinner last night was great. You just can't beat Mahi Mahi!! Hubby put some fresh ginger, S&P, Italian seasoning, sesame oil and sesame seeds on it and then put it on the grill. Great flavor! We had a green salad with all the goodies in it and french fries. Very satisfying. Not sure about tonight yet--still to early and I am only on my second cup of coffee. Happy Monday!

Last nights naughty nachos were amazing, but tonight will have to be more healthy to make up for them. Im thinking maybe grilled salmon and salad with a baked potato... not sure yet...

Here it's leftover chicken cacciatore, Mr. L gets the pasta, I get spinach salad.

Well, I am thinking something chicken.... I have tons more zucchini....So this is what I am thinking of making tonight:

WW Spiced Chicken with Spinach and Zucchini for 4.5 Pts
Ingredients
  • 1 tbs mustard, (mustard powder)
  • 1 tbs ground cumin
  • 1 tbs ground coriander seed
  • 560 g skinless chicken breast
  • 3 whole zucchini, cut lengthways into 4 slices
  • 500 g frozen spinach, excess liquid removed
  • 250 g Weight Watchers Plain Cottage Cheese
  • 2 clove garlic, crushed
  • 1 medium lemon, cut into wedges
Instructions
  • Combine mustard and spices in a small bowl. Rub over chicken and turn to coat other side. Stand for 10 minutes.
  • Heat a large char-grill pan over high heat. Spray chicken with oil. Grill for 4 minutes each side or until brown and cooked through, adding zucchini to grill during last 5 minutes of cooking.
  • Meanwhile, combine spinach, cottage cheese and garlic in a medium saucepan. Stir over medium heat until hot. Season to taste with salt and pepper.
  • Spoon spinach onto serving plates. Top with zucchini. Slice chicken diagonally into 2cm-thick pieces and arrange on plate. Serve with a lemon wedge.

I have petite boneless sirloins defrosting for tonight. I'll probably make (frozen) creamed spinach on the side and some type of rice.
