We are still stuffed from our "garbage plates" from earlier........so dinner will be a light supper of chicken corn chowder and a chicken quesadilla make with leftover chicken from Friday night.

Stay warm! I'm in my sweats and ready to relax!

Thumbs up Southern tummy rubbin' good

Tilapia fillets rolled in cornmeal and panfried, cubed tators also fried, cole slaw, pork and beans, trimmings. Iced tea to drink. Simple southern Sunday meal

ok tonight for dinner will be hashbrowns and scrambled eggs with last night's left over chicken and sausage skillet over the top.

DH is doing great! He just needs to slow down! Homemade soup and cornbread tonight! Yum!

Tonight was real simple, homemade taquitos, beans, and a small lettuce and tomato salad on the side. All washed down with, you guessed it, iced tea. I am ready for cooler weather...supposed to be a chilly 64 tomorrow, then will work its way back up to the high 80's by Thursday. Have a good night, all.

Default fast good dinner

1. Pasta w/oil&garlic topped with grilled chicken
takes long enough for the pasta to cook. While pasta is cooking put chicken in pan with a little evoo when about done put in garlic (med heat)
little red crush peppers (I like basil in this also) when pasta is done drain put in pan with chicken ,oil & garlic. Done. this is even better with feta cheese and black olives

2.Like fish? take fish filet's frozen or fresh lay flat pat dry. In a bowl mix creme cheese, lemon pepper, shrimp (raw)if you like onions grated. season salt. put mixture on fillet, roll, put in baking dish. mix butter, garlic, lemon, white wine (dry is better) to taste. Ladle over fillet bake to fish is done. add more butter if to dry. serve with pasta or rice

3.Boneless lemon pork chops; mix milk and eggs dip chop cover with Italian bread crumbs sauté in olive oil til brown. put on baking pan in oven 350. while they cook make rice pilaf ( break spaghetti add rice.brown in pan with butter. when brown, add chicken broth. cook minutes. chops and rice done about the same time. put lemons on them.

4.Shrimp stir fry (10 minutes) package frozen stir fry veggies dip in boiling water to thaw. put in pan with (you guess it) olive oil and garlic. Sprinkle with season salt and pepper even stir fry seasoning. cook til desire texture add shrimp cook til shrimp turns pink.

SNOW.... it is supposed to SNOW today....what are your ideas for a lowfat SNOW friendly meal... I need inspiration today... And I am curious what you all would do if you had snow.... I am leaning towards soup- but that is my usual Snow fallback- so come on- give it to me- What would YOU make?????? I am getting boring.....
