Don't forget Bydand's apple concoction and the pie, too.

DH put in a pork roast and is making some sort of herb/garlic/spinach/pasta dish along w/steamed broccoli. I made choc. chip cookies all by myself earlier today, so that'll be dessert - with or without vanilla ice cream.

From what I see transpiring in the kitchen the pizza is not going to happen until later in the week. First rule of the kitchen is to never fuss about a good hamburger. Never that is if ya want the relief cook to lend a hand now and then.......

Lima Bean/Ham soup's done and chilling for tomorrow and another day.

Roast with carrots, mushrooms, onions is baking as are sweet potatoes.

Froze the leftover stuffed peppers. The way I see it I won't be cooking much this week!

Gives me time with the shop vac to clean up the garage as they finish.

Very simple supper tonight....split chicken breasts roasted in convection oven..with a little olive oil and herbs on them, short grain rice, lightly buttered fresh brocolli. (This is the way my DP would like me to cook all the time......straight up meals with few sauces or combinations.

Elston, I am sure your DP loves all of your wonderful dishes! I know I do just by reading about them!
Everyone here knows how I brag about what wonderful neighbors I have---so lucky! Well they brought me back a huge bad of two kinds of apples--freshly picked--green and red! They are just beautiful and so juicy and crisp! Nothing like tree ripened! They also brought me a head of freshly picked cabbage that is huge...way more then two of us can eat in one or two meals. So I'm going to try the stuffed cabbage leaves this week. Those I can freeze plus we can enjoy a couple of meals with cabbage as a side! How sweet of them! Now to figure out how to use up those apples before they go bad!! I've already gotten some good ideas right here and any more are welcome. Also do I soften the cabbage leaves a bit before trying to make the cabbage rolls? Should I stuff the cabbage rolls with the same thing I put in the bell peppers??? I'm so open for ideas here!

The burgersteak was great with jalapenos hiding under the melted cheese. Fresh garden salad and a side of baby limas and iron skillet browned onions complimented with iced tea made my dinner. Dessert is either a mystery or is just not going to happen. I may resort to some peanut butter and jam blended together on a few crackers later on and calling it dessert.

Hi Cyn......a quick easy applesauce is peel and cut about 8-10 apples. place in a saucepan with some sugar and cinnamon...add a dash of cloves and a dash of nutmeg.
Cover with about 1/4 cup water and simmer until the apples are soft. House smells great and the applesauce is delicious too.

Hope this helps.
