The first fantastic fish pie sound wonderful.....I am sure I will give it a try soon.....not today....but soon. thanks Delia's recipe sounds a bit too complicated for me to fake or fudge it .... so maybe not...
Tonight I am just throwing a chicken on the rotisserie and then with leftovers I will turn it into maybe a chicken vegetable orzo soup tomorrow.
I love the smell of it cooking.

I would like about two pounds of snow crab legs with a huge Artichoke and about 1/2 pound of hot melted butter and along with that some hot homemade fried onion rings. But however due to financial constraints we will most likely boil a couple of hot dogs and roll them up in tortillas and try to pretend that we are happy with our dinner !

Thank goodness for imaginations! I have found chicken to be a main stay on our menus lately---prices are good. We try to catch all the sales and use coupons when we have them. I would love to eat out more but hubby can't see spending the money when we can make a better meal at home! Besides we are very limited on decent restaurants in our area. At least we do eat out when we take an hour drive to do major shoppings or to visit my son and his family. There are some good restaurants in that area!
Cyn if you like Italian and really upscale Italian there's a restaurant in Huntersville in a shopping center. We went last year and it was fantastic.
We try to use cheaper cuts of meat and cook low and slow as Mr. L is not a big fan of chicken-me I could live on it. Also we use super lean ground beef as there's very little waste.
Lobster...again. Right now, here in Maine, it's pretty much cheaper than hot dogs ($2.50/lb). I have been given 3 seperate shopping bags full of lobster in the past week from lobstermen who were too ticked off to sell them at such a low price so they are literally giving them away! Lucky me. I think this batch will do it, though...I might splurge tomorrow and go for the hot dogs.
Gosh, I don't think I could ever tire of eating lobster.
