Tonight I made rigatoni in a marinara sauce with garlic, green pepper, and sweet italian sausage in it, along with a salad and garlic bread. Quick, easy, and delicious!!!

We had thunderstorms today so that gave me the chance to try a new recipe. I made smoked trout burgers without the trout - I substituted smoked whitefish, which is readily available here. It called for some mashed potatoes and grated zucchini added to the flaked fish, and it all wrapped in bacon. It was really good. The recipe made 6 large burgers instead of four and since there is only the two of us, I took half to my parents' place. The recipe was definitely a keeper and a nice change from regular hamburgers.

I was thinking that next time I might add an egg to the mix to bind it together better. The burgers formed perfectly, but then after sitting in the fridge for the recommended hour, they wanted to fall apart. I wondered if that was part of the reason why the bacon was wrapped around it.

Leftover BBQ Chicken. (hubby did this yesterday at the grandkids request). Skillet corn (from garden!). Green beans. Sweet tea. Key Lime Pie (also leftover).

Tom Kha Gai (ต้มข่าไก่) - traditional Thai chicken/coconut soup. Served in a Thai hot pot
with a sterno gel chaffing fuel in the bottom tray to keep the soup hot. Hope you can see the fire coming from the "chimney"
