Last night I made Mexican style stuffed peppers. I have loads of filling left over, so today I made a pasta salad with broccoli, carrots, water chestnuts, peas, red peppers, black olives and chick peas and a red wine vinaigrette.

We have taco shells, and the Mexican stuffing can pull double duty as taco filling, so it's a "fend for yourself" day. I'm tired.

Whole roasted chicken, spaghetti with olive oil and parmesan cheese, and a spinach salad with radishes, carrots and red onions.

Chicken parm, pasta and corn on the cob (it was selling for .10/ear today, I think they just wanted to get rid of them). Had garlic knots but forgot to put them out (grrr). Tom. will prob. have leftovers, hopefully w/ the garlic knots, maybe w/ a salad.

Spinach salad with tomatoes, onions, cucumber, avocado, Gorgonzola and mussels. Light Italian dressing.
Just perfect for a hot evening.

A co-worker of mine gave me a bag of baby yellow squash from her garden, so I cooked them, and then in fine Southern tradition, kicked up the caloric level a few notches by adding a lot of cream, cheddar cheese, and buttery Ritz crackers on top, making a delicious squash casserole. This, with a glass of white wine, is all I need tonight!

We had crockpot pot roast, kinda boring. But oh well, I dislike Sundays anyway.
