Used the last of a grilled sirloin into some Golden Mushroom soup with added fresh onion over brown rice. I may just dip again sometime during the night. Had fresh tomato and baby lima beans on the side.
I made Mediterranean style chicken breast - with mushrooms, tomatoes, kalamatas, shallots, garlic, capers, chicken stock and topped with roasted pine nuts. I also made some roasted sweet potatoes and Brussells sprouts. Didn't go together at all with the chicken dish, but I was in the mood for roasty bits.
Happy cow appreciation day! Did anyone dress up and go to chick fil A?
I have baby back ribs in the slow cooker ... have never made them before (can't believe I got to this age without cooking ribs) so I hope they turn out OK ...
As soon as we get home from our monthly neighborhood breakfast, the smoker goes on, the ribs get their rub (I meant to do it yesterday) and they will smoke until about 5 tonight. I am having potato salad with the ribs and snow peas I think. I might also cut up some fruit, but I don't have quite enough variety to make a fruit salad. We are waiting for the mangos to ripen.
I baked a French baguette and I will make from cottage cheese a creamed cheese flavored with salt, black pepper, chili powder, garlic powder, chives and curly parsley. This spread is refreshing and tasty on a bun or bread. As a side dish we have sliced tomatoes with sprinkled chive and spring onions. Also a spicy mango salad, and an egg salad. To drink a fresh pressed grapefruit juice and for the others a glass of wine or beer.
