Made a superb sauce with pork spare ribs and homemade meatballs, some ravioli I picked up when I was in NY last weekend, and a nice romaine salad. Yes I am Italian (1st generation) and take my sauce (I still don't get how some people call it gravy) seriously. Use only San marzano tomatoes from Italy, the freshest basil and garlic I can find, good parmiggiano reggiano, and 1 cup of a $30 bottle of chianti Classico. My meatball recipe, that one goes to the grave with me.
Sounds amazing. I am 2nd generation Italian, as is my husband. I'm not wild about a whole cup of chianti in the sauce, though, depending on the entire amount of sauce made. I will occasionally add "some" red wine to my sauce, but not always.
I don't have a "recipe" per se for either my sauce or my meatballs.....it's an eyeball thing, lol. Same with salad.
Do you use a recipe for your salad? If so, would you share?
I made a big pot of sauce so I put in a good shot of wine. Salad is ultra simple, head of romaine, 1/2 an orange rough chopped, some red onion, and a few chick peas, and a splash of good balsamic vinegar and olive oil. Simple but superb

Sounds perfect. A bit of garlic in the salad wouldn't hurt, either!
fresh apricots, split and stuffed with fresh ricotta with chopped fresh herbs, wrapped with bacon, and broiled. so good!
