I love when I have leftovers from the night before. So today we have plenty leftovers of roast ,making garlic mashed potatoes today and broccoli with browned butter on top. For dessert just a cut up Cortland apple and Bartlett pear.

Last night I made Orange glazed steak ham with roasted potatoes and green salad.
Tonight I'll use a bit of the left over ham in a quiche with some broccoli and a fruit salad of fresh strawberries, peaches, blueberries and yogurt with a sprinkle of granola.

Tonight's dinner will be pulled pork sandwiches. I just put the pork roast in the slow cooker.

Last night I made a big batch of spaghetti to go with the meatballs I had made over the weekend. I also made a roasted beet, goat cheese and toasted walnut salad. (no lettuce). I topped it with a citrus vinaigrette and added some mandarin orange slices and some shallots.

Tonight will be these leftovers, I still have a good amount in the fridge.

Homemade lasagna, garlic ciabatta rolls and a wilted spinach salad with warm bacon dressing. Sweet iced tea to drink.

Roasted vegetable shepherd's pie (with lentils instead of meat) topped with mashed rutabaga and potato and served with miso-mustard gravy. Salad of kale, broccoli, green cabbage, chicory and thinly sliced Brussels sprouts with dried cranberries and pumpkin seeds and pear vinaigrette. I made some pumpkin sourdough, but I think it may wait for another, less filling meal. Or toast in the morning.

I LOVE spinach salad with warm bacon dressing. I also add little bit of red onion and mandarin oranges. We always have this salad at holiday meals and special occasions. My kids beg for it.
