The crockpot is definitely one of the most user-friendly and useful implement in the kitchen. Some people can't do without a food processor, etc. Give me my crockpot!
It's perfect for a lazy cook like me. Toss some meat and vegetables in there, put some broth over it all, season with garlic and pepper, and go away. 6-8 hours later dinner is ready. I'm not a fancy or good cook, but just a meat and potatoes kind of guy.
I just ate the pot roast I made tonight, not bad if I have to say so myself. (and I have enough leftovers for a couple of day lunches) I still cook quantities as if I am cooking for the whole family, but there is just my Son and myself. I had one of those crockpots that didn't have a timer on it for a long time but a few Christmases ago my other Son bought be the one with 4-6-8 and 10 hour settings on it and when done it goes to "keep warm." I like this one a lot better than the old one.
I think that there is fish in the freezer that needs to be used and potatoes that need frying. I've got a bottle of malt vinegar just begging to be used.
Got home from work today and put a pot roast, some red potatoes, carrots, and some onions in the crockpot on high.......so I should be able to eat pretty soon. I LOVE leftovers, especially to take to work for lunch.
Last week I threw a pork butt and some bagged sauerkraut in the crockpot overnight, and for dinner that night I made mashed potatoes and put the pork and kraut over them. Everyone at work kept coming up and sniffing what I was warming up for lunch the next day. Sure beats McDonalds.
The crockpot is my favorite cooking tool, except for the barbeque grille.

I have a pressure cooker that I love for (mostly) the same reasons except it is a lot faster and you can brown stuff right in there so less to clean, it's an electric Cuisinart - I had the Fagor but broke the valve deal and upgraded to the Cuisinart and use it so often for everything from beans in 30 minutes (from the time it heats up- and this is dry beans) to the brisket we made the other night in less than an hour. We did a side by side with an Italian beef roast just to see, and the friends and family all preferred the one in the pressure cooker in a blind test. Some purists say that the stove ones are better, but since I was in the room when my mom blew one up, I just can't get myself there yet. Maybe someday.
Smoked salmon chopped and mixed with plain greek yogurt and capers (and a dash of sea salt and coarse ground pepper). Served with chopped fresh tomatoes, mixed with pickled red onions, fresh cilantro, olive oil, a dash of rice vinegar, and salt and pepper to taste. Put both in whole grain pita pockets (I prefer mine torn into bite size mini rolls) and enjoy the burst of flavor!
Later I'll sit back with a cup of ginger tea...ahhhhhh!
It looks like we will have thin spaghetti with Italian sausages and veggie sauce/gravy again.
I will get me some French bread with butter and garlic, too!
