Yum, the red kidney beans and rice sound good. I think I'll have that plus a kale and mango salad.

Tonight we have "Tomato Poached Eggs",yogurt and lassi . For dessert a fruit salad with almonds and Akvavit (Skandanavian Schnapps)

6 tbsp olive oil
7 sliced garlic cloves
8 fresh green curry leaves
7 small green chilies (we like it spicy)
2 1/2 lb diced tomatoes
4 eggs
salt to taste
cilantro/coriander for decoration

In a frying pan warm up olive oil,add garlic and let it get golden brown than add curry leaves with the chilies.Put a lid on and remove from heat.Two minutes later add diced tomatoes/salt and cook on medium heat about 10 minutes.Reduce heat and gently crack the 4 eggs into the frying pan giving the eggs enough space and don't break the yolk ( sunny side up egg) and cook for 5 minutes til they are done. Serve right away (decorated with cilantro) and eat with basmati rice,naan or chapatis.
*It is a fast,easy 20 minute dish to do...for me an East Indian breakfast,lunch or dinner dish

Everyone is sick including me in different stages. Tonight is old fashioned southern bean and bacon soup in the crock pot. And only because the store was out of split peas. Grumble grumble.

Trying to keep hubby happy with our new years protein and greens diet so I have cracked open my Thai cook book.

Tonight making green papaya salad with cashews along with stir fried beef in oyster sauce.

I am going to be making "ginger tomato salmon" with "coconut jasmine rice". At my Publix supermarket it was the meal they were featuring (and offering samples); I had some and thought it was really good! So I bought the ingredients and will give it a whirl. (total time 30 mins.)

For my husband I am making him a nice piece of wild salmon with dill and lemon cooked rare. We will both have whole wheat penne with peas garlic and oil.

The 3 of us are splitting a really thick t-bone. Probably a side of lightly sauteed zucchini and yellow squash with garlic and lemon, and a sweet potato stuffed with black beans, corn and cheese.
