I went to a farmers market yesterday and bought a huge beautiful locally grown bell pepper..(this pepper looks as if it could have won the blue ribbon at the county fair)..I think I will stuff it for the two of us.....perhaps cutting it longitudinally before stuffing. I will use a basic ground beef and rice stuffing with bacon on top and tomato sauce hit with some Worcestershire sauce and brown sugar. I have some left over mashed tater from dinner last night I will nuke and voila...supper.
Chicken fried steak with mashed potatoes and black eyed peas
I have a pan of black eyed peas cooking on the stove right now. I had some fresh ones I bought for new years but failed to cook and serve....I hope they will still stave off poverty and bring me a prosperous new year! They will have to go with my peppers and taters and dp's rice.
I love chicken fried steak too......I saw it on the menu at the southern grille we visited the other day. I order the fried chicken and that was delicious....next time it will be the chick fried steak with mashed taters, gravy and okra.....unless the daily special is irresistible.
Cooking a pork loin smothered with some simple spices and trying out a new potato recipe with some Yukon gold's..
Should be good and need a break from beef..
