I have a package of sun dried tomato chicken sausage to use up. I am thinking a pizza. So far I am wavering between a spinach, feta, sausage with a light white sauce with sundried pesto sauce I have OR a zesty lemon artichoke hearts and sausage pizza with a fresh tomato sauce and italian cheeses.
Will serve a crusty garlic bread alongside and a salad.
Got to try the creamed chicken recipe someone posted earlier (in last year's thread #2, I think). But instead of having it over cornbread, we'll have it over rice.
We are having...gluten-free mac and cheese and smoked sausage. It's a very easy breezy night here...and kid-friendly! I gotta get back to my low-carb stuff, though. I gained way too much weight over the holidays.

I cook for my dog all the time, I just make a batch that lasts all week and add the vitamins, supplements nutrients he needs right before feeding.
Red kidney beans mixed with brown rice, saute'd onions and garlic and spices. Also making chicken legs for hubby. No meat for me oh and I am making saute'd kale.
Thai Larb chicken lettuce cups along side Tom Kai Gai soup (will make the soup on the spicy side)
