It's been ages since I have had Rockfish. I seasoned it with drops of olive oil, lemon pepper, onion powder, garlic powder and baked it. I had a taste for spinach but the only kind on-hand was frozen to which I added a couple of slices of zucchini, scallion and steamed it. Boiled Yukon-gold potatoes topped with a little butter, sour cream and the green part of a scallion. Dinner hit the spot!

today I will cook a 12lb turkey - one of 12 turkeys I bought when they were .49lb thanksgiving week, and threw in the basement freezer

we can make lunch meals off this all week, what a bargain!!!

I think I am just fixing a small chicken casserole and making an avocado salad with cottage cheese. We have our couples in houme bible study this afternoon. We always have lots of snacke, and a little wine, so will not be hungry for a large dinner. We also do more visiting than we do bible study. The bible study is just an excuse to get together every month for a few houes.

chicken fried steak will be on the plate....I have the steaks, buttermilk, egg, panko bread crumbs. We will probably have rjce OR sweet potatoes with it and I will make some country gravy.....a meal seems to be coming together in my mind. That's a good thing....when I started to post I didn't have a clue other than the steaks I bought on the way home.
