A complete change from what I was about to post an hour ago. Since we do a lot for our neighbors, they tend to drop off a lot of food our way. Some of it is great - two sides of salmon and some of it is well, not so good - three boxes of potato buds.
However, we take it all and try to make the best of it.
Made a beef (brisket) and veggie stew tonight. Celery, carrots, tomatoes, red bell pepper, golden potato, olive oil, paprika, chili pepper, touch of cayenne, garlic, rosemary, split peas, kidney beans, lentils, black beans, pinto beans, black eyed peas, brown rice, and rinsed out bleu and Parmesan cheese containers.
Had two bowls over croutons then put the rest in a pitcher in the frig for quick meals for the next few days.
Also made a pan cookie to be sliced into "brownies", dark chocolate base with caramel kernels. Almost had a crisis when I couldn't find another bag of flour. How could I be out of flour? Did find another one, though.
Just needed to de-stress some, so I got into a cooking mood while listening to Martina McBride, Circa Paleo, and humpback whales.
Friday menu is another dish I grew up with. The only difference is I use turkey bacon not pork bacon. In a frying pan I cut up bacon and onion and fry. In a large pot I cut up 3 cans of whole tomatoes with all of the juice. Once bacon is cooked add that and in another pot I make 2 lbs of elbow macaroni. Once that macaroni is cooked, I mix it in with the tomatoes and bacon. Top if off with some Romano and pecorino cheeses. Once this meal is done the leftovers are yummy mixed with a little bacon grease fried in the frying pan.
Tonight's plan is to grill up some steak tips and corn on the cob. It will be a choice of baked potato or oven roasted potatoes. My ten year old can't tolerate the texture of baked so I slice potatoes thin, olive oil, salt and pepper and then roast them.
