I had my planned Easter menu but nothing tasted (or went quite the way I planned). I had two stuffed pork roasts (one savory, one sweet), mashed potatoes and gravy, mac n cheese and spinach. Because my phone kept ringing and I was distracted, I scorched the cheese sauce (I had a huge pan of the stuff so I tried to salvage it with more milk, cheese and crumbled bacon on top). Everyone ate some but I have a ton left. When my brother-in-law offered to slice the roasts, he sliced them way to thick and had them both on the same platter (yes, I had two platters out). When my husband attempted to serve everyone, he lifted the slices (vertically) with a fork, so of course the stuffing was falling out. I totally forgot about dessert. My spinach was rather bland and not seasoned the way I usually make it. I am really embarrassed, as this was my first Easter in Washington and I'm generally known as a good cook.

I'm making a simple dish that my Mexican-American grandma use to make. It's potatoes, jalapeños, onions, garlic, cilantro, spices (cumin and oregano) and scrambled eggs all cooked together and served with homemade flour tortillas.
