Tonight I am baking a pork tenderloin with some apple pie filling I canned this fall. Also making candied ginger carrots and funeral potatoes. I never heard of funeral potatoes until I started reading this board. They sound good and it's high time I try them.

Oh, that's a good idea. I'm making roast beef tonight for a birthday dinner for my son and DIL. I was making twice baked potatoes, but I think funeral potatoes would be better. Brussels sprouts and chocolate cake.

I forgot I took photos of last night's dinner. Here is the mixed citrus salad.


Here's the salad topped with the pan seared scallops. The husband ended up cooking these instead of me. They were incredible!

Tonight very simple meal. I will set up buffet style home baked bread and buns,butter/dill butter,tomato,onion,cucumber,dill pickle slices,variety of cheese,green grapes,baby dill/parsley meatballs,chicken tandoori chicken breast cubes,olives and chilled calendar beer I received as a gift. Each beer is from a different country and the % ranges from 3% way up to 13%. Some beers are fruity,some are dark,some are light ones. For dessert vanilla ice cream with melted dark chocolate and thin pear slices and syrup

the fishmonger had a gorgeous red snapper. So I'll pan sear that, add some sauteed baby spinach with garlic and sesame seeds, and toasted brioche tonight.

It is a beautiful day here, in the 60s with some shine. Spoiled brat has volunteered to grill. We are have lamb chops (yum yum) and grilled veggies. I have a couple of left over pieces of tuna steak that can be reheated but only for a short time. I already over cooked it a bit. I think the perfect addition will be a nice, small green salad with a sesame seed dressing.
