Making chicken breast curry with basmati rice ( added cashew nuts,cardamon and clove),cilantro chapatis,onion and cumin raita,lassi to drink. For dessert a grapefruit,clementine,orange,Pomegranate fruit salad with shredded unsweetened coconut and vanilla sugar ( choice of Cointreau or Grand Marnier and whipping creme offered). Later a glass or two of red Glühwein/mulled wine with leftover Christmas cookies.

Snowing here. Getting about 1 foot of snow. I am making roasted duck tonight with mashed potatoes and maybe a veggie. Serving Hoisin sauce with it.

Tonight it's venison and rice stuffed cabbage rolls from Daughter. She makes hers Hungarian style with a layer of sauerkraut. That should be a nice foil for the venison, I think.


This calls for a salad, I think, but at present I've no clue. We just finished up a strawberry salad. And there's cole slaw in the refrigerator but that's overkill.


We'll probably end up with the old standby. Blue cheese and greens. Never get tired of that. I still have some carmelized walnuts left over from Christmas I can add.


If I weren't feeling lazy I'd make some onion bread to go with it.

Were having turkey, stuffing and gravy, out of the freezer from thanksgiving. Cranberry sauce and peas.

Lubby, what is your method for making duck tender? Do you marinade or tenderize in some way before cooking? I've only tried to bake it once & it was a leathery, unchewable clump, akin to a char-roasted leather football. At least it was salvageable as soup... if one enjoys noodle soup made from roasted footballs.

As I'm stuck in a hotel for a bit, I'm learning new & unusual meals made with a rice cooker. Since I'm not a rice eater I bought it more as a food warmer, water heater & hard boiled egg machine. Tonight, 4 Russet potatoes fried in olive oil & for dessert, bananas with cinnamon and/or a few tangelos. Not bad & better than fast food... my car's so packed, I need to remain the same weight so I don't need to grease the door jams in order to slide behind the steering wheel.

Sort of an Italian cabbage stew, as best I can describe it. crumbled sweet Italian sausage, onions, peppers & garlic with marinara, shaved cabbage and cannelini beans all in the mix, topped with some parm at serving.

Tonight it will be true comfort food, chicken with morels. (Ina). Morels are a little expensive, but a few go a long way, and the dish is so delicious. White rice and broccoli with lemon. Fine dinner for us tonight after a snowy day.

In about 20 minutes, when DH and DS return home, I am trying something new, that is in one of the cook books that I received for Christmas.

It looks very good. It's called Shakshouka - a west Africa dish.

Here is the recipe -

1 T hot paprika
1.5 tsp ground corriander
1 tsp cumin
1 cup diced onion.
2 garlic cloves minced.
1 jalapeno chiiele minced
1 and a half cups of diced tomatoes (I am using canned organic tomatoes)
3 TBS tomato paste
Sea Salt or Kosher salt to taste.
Black ground pepper to taste.
4 large eggs.
1/4 cup chapped flat leaf parsley.
Serve with warmed pita bread and a green salad.

1. In a large pan combine all of the first ingredients (not eggs and pita)

2. Let simmer.

3. With a large spoon make 4 wells in the tomato mixture

4. Crack an egg i each. Lightly season with salt and pepper.

5. Cover and cook for 5 minutes - or until eggs are set.
