Last night was a pantry, fridge and freezer raid dinner. Chicken breast coated with panko and sauted, dry porcini mushroom gravy, potatoes, broccoli and carrots.

For us it is the beginning of Victoria Day long weekend and the good time has started.....

Tonight chicken hara masala with basmati rice and chapatis. Served with red onion and green chili raita. To drink Alexander Keith's India pale ale.For dessert bought mango or pistachio ice cream.

6 chicken pieces of your choice
2 oz Hara Masala ( a mixture of fresh cilantro/cothmir/dhania and mint/pudina and fresh chilies/mirch.All chopped finely,mixed together)
150 ml plain yogurt
1 1/2 tsp salt ( or less)
~1 oz of butter
For garnish lime slices and mint sprigs

Mix Hara Masala/cilantro,mint and yogurt together.Put chicken pieces on a big cooking foil in a roasting pan,spread the yogurt mixture all over the chicken.Sprinkle with salt,dot with butter,cover with foil and bake in the oven 350 F for about 1 hour and 15 minutes.When time is up open foil and cook for another 15 minutes to reduce the juices.When ready serve the chicken with lime slices and sprigs of fresh mint.

Last night it was Linguiça (grilled) with side of macaroni and cheese.
To drink: mint iced tea (me); some peppered beer (Mr C)

Tonight it looks like Tyson’s combo of lemon chicken bites and I think hubby mentioned a bourbon bar-b-que; veggies: steamed broccoli. Not sure what I’m going to drink yet.

Last night we had sandwiches on rye. filled with freshly made salmon, mixed with goat cheese & finely chopped spring onions. Tonight it will be frozen egg rolls, with fresh fruits.

I'm trying to put together a spinach & mushroom quiche before the thunder boomers start and I have to retreat to the basement.
