ended up going to a sports bar to watch the game last night, so tonight I fixed the chicken thighs with asparagus. Used Perdue thighs -- I typically buy the store no-name brand -- and the Perdue thighs were tasteless and the skin didn't crisp up. I only bought them because they were the better price last week, but I'm not falling for that again!

Last night just had a big salad with lots of veggies.

Tonight is a clean out the fridge event. Sauteed mushrooms, spinach and onions with quinoa and pick apart the roast chicken, add to the quinoa and do a siracha or korean sauce, green onions, avocado and maybe some pickled daikon and sesame seeds.

For tonight's dinner I pulled some meatballs and sauce out of the freezer. My husband turned those into meatball subs with plenty of goeey locally made fresh mozzarella.
