Last night we had corn dogs, I so miss my friend LondonCowboy to envy that meal (although I did enjoy it )

Tonight I baked some breakfast sausage links to serve with Mexican omelets, warmed corn tortillas, and watermelon chunks.

The omelet filling is grated cheddar and a pre-sauteed chopped veggie mixture consisting of: 1 small garden tomato (yay), clove garlic, 2 seeded jalapenos, 2 inch hunk of sweet onion, a few radish greens, salt and pepper. Fresh garlic chives and basil sprinkled over before serving.

Leftover veggie pizza from lunch with friends at a Monterey pizzeria earlier today. www.giannispizzamonterey.com. Drank Stone IPA. (It was an Italian food weekend. Will eat my leftover chicken cacciatore tomorrow. Buon Appetito!).

It was cool here today, so I made white bean vegetarian crock pot chili soup, https://veganinthefreezer.com/white-bean-chili/ savory, herbed cornbread, avocado, tomato, and red onion salad.

Strawberry Short Cake.

Variations - I add shredded carrots, and baby spinach chifonade, (at the end of the recipe - no more than for 30 minutes.

Friends who eat meat, add white meat diced chicken.

Crab, crawfish, cray fish, shrimp and cod are other ideas.

Frozen white shoe peg corn, and even better, later in the summer, fresh butter and sugar corn kernels.

Instead of corn bread - flaky biscuits. This is not a very hot and spicy chili

I had some roast pork and ribs, veggie samosas, and potato salad. The pork/ribs and samosas came from Whole Foods hot bar and, believe it or not, were pretty damn good! I made the potato salad.
