These grilled beauties

I took grape tomatoes, halved them, added fresh mozzerella chunks, fresh basil, diced onions and minced garlic. I sprinkled with pink sea salt and fresh pepper, olive oil and balsamic vinegar. I will serve on bed of field greens.

Vegetarian enchilada bake. https://www.tasteofhome.com/recipes/...enchilada-bake - only I subbed fresh corn. Home made potato salad, home made coleslaw, and grilled peaches.

Strawberry watermelon Daiquiris.

Chocolate fudge walnut brownies topped with vanilla ice cream and salted caramel sauce.

(I think I might gain a couple of pounds this weekend)

We used to get in on Block Island, where my uncle’s family used to be fishermen. Auntie fried it in butter and then we slathered on Seidners mayonnaise. Yum.

Tonight I made colcannon wth kale, and corned beef. Brownies for dessert.
