Tonight is my Mardi Gras party for twelve of my neighbors:

Chicken, shrimp, and sausage jambalaya
Garlic bread
Several salads from my neighbors
King Cake


I was hoping to do Okra and Tomatoes BUT .... I can never find decent okra in this area.

Alm - to share with everyone - Kuechle is a southern German carnival specialty. basically doughnuts with a paper thin center and yes - grandmother pulled them over her knees. Dust with powdered sugar, serve with apple sauce or plum butter.

Yes Threestep I was reminiscing today while baking. I had totally forgotten about them. I will try to make them one day. I still remember going from door to door in my costume singing at Fasching/Carnival time and in return we got these Knieküchle.Great memories.

I used to do the baked apple routine. However, it gets to be cumbersome to eat a whole apple after it gets baked.

Also, I get a lot of apples from the "salvage bin". Some of them have bad spots but at 10-20 cents per pound, who cares.

What I generally do is to dice the apples into 1/2 inch cubes into an oven safe dish that has been buttered. Then I sprinkle ground nutmeg, a sweet cinnamon, and sometimes cloves. Then I drizzle a fine coating of maple syrup over the apples and bake. Sometimes, I add raisins and craisins. Sometimes, I add lime or lemon juice. I do NOT cook the apples to mush. I do want them cooked. And that generally happens in about 30 minutes.

I prepared the apples last night as 1) I had the oven going with the macaroni and cheese and 2) those apples were UNPLEASANTLY tart. I believe that they were from New Zealand which is NOT uncommon this time of year.
