Husband is going out of town tomorrow until Friday. I intentionally made Southwest Chicken soup today, and I'll eat it all week while he's gone. Usually if it's just me I end up grabbing a couple of frozen meals for myself or making a sandwich. I figured this is a bit healthier.

1st day of my new job (which was wonderful, but exhausting, btw)... my boss decided to buy dinner, so by the time I got around to indulging, it was 1 miniscule slice of awful, cold, pepperoni, cardboard crunch, gluten-free pizza from Domino's. Who knew pizza could be so horrendous??? I pretended I loved it... I hope to never eat it again, but I really do appreciate the free dinner, courtesy of the company who is paying my rent. Tap water to drink. Mother Mary... help me.

Next week, I'll need to learn how to plan healthy, tasty lunches to bring with me to enjoy for the entire 30-min I have for lunch.. thanks a lot $B company. Right now, I'm just trying to find my way, via GPS, to the right bldg each day.

last night was a SW style chicken soup.

Tonight, I think it will be roasted rack of lamb and roasted asparagus, with banana sundaes or pears for dessert.

Last night's tiny chickens aka Cornish game hens, as they came out of the oven. Blitzen is on stand by in case I drop anything!

This my plate with wild pecan rice, that was pretty blah, and roasted asparagus.


Tonight I am just heating up some homemade sloppy Joes from my freezer. Apple slices to go with it.
