Tonight mixed vegetable soup with roasted golden large steel oats.For dessert homemade Macintosh applesauce with cinnamon.

butter
chopped onion
large steel oats roasted golden in butter
diced carrots,red Bell pepper and celery
corn and green peas
water
salt/black pepper to taste
roasted ground cumin or marjoram
curly parsley
* you can use other vegetable of your choice

Heat butter in a large saucepan,sauté onion until translucent,adding oats to roast til golden brown and carrots,red Bell pepper and celery.Next add corn,green peas and water,let boil up and immediately reduce heat to low for about 15 minutes.Flavor with spices,bring back to a boil and reduce again the heat to low for another 10 minutes. Occasionally stir the pot.Lastly mix an egg and whisk under,adding curly parsley and let simmer for a minute more.

Tonight we are having the tacos we were supposed to have last night. Last night I was tired, wanted something quick and actually tacos are not quick when you think of the chopping, etc. Anyway I had some frozen stuffed clams in the freezer I had gotten on sale a few weeks ago. I know now why they were on sale: OMG they were so bad neither spoiled brat nor I could eat them. We never tasted a hint of clams. The only resemblance to clams was the shell. It is rare I take anything back to a store but I am telling our store manager about them. I don't want my money back, I just want to let him know, it wasn't the best buy I ever made of he made either. I guess, this is one time, I got what I paid for which wasn't much!!!!!!

Last night I was up until after midnight, thanks MLB for the late starts. Then around 1:30 my six year old woke me up to let me know he was coughing. My husband's alarm went off at four. Of course he wanted to discuss the game, he went to bed early, while he got ready. My alarm went off at 5:45. I am so incredibly tired today.

I need to make something easy, comforting and not put me to sleep. I need to stay up and cheer on my Sox! I am thinking tomato soup and grilled cheese sandwiches on scali bread. I have this recipe for a few years now https://www.tasteofhome.com/recipes/...l-tomato-soup/ it is easy and really great tasting. If I am not too tired I will have a couple Narragansett Lagers while watching the game.
