So many excellent dinners! And mine was good tonight (in more ways than one). Pork tenderloin medallions cooked on the stovetop for about 3.5 minutes, then a bit of Asian chili sauce (not my usual favorite, but a new one that's a bit hotter and less sweet) ... AND I made my big pan of veggies again!



Everything was delicious, maybe ESPECIALLY the veggies because I've been so lazy about them lately! Tomorrow, salmon with veggies I think. My 2nd knee replacement is in less than 3 weeks (it was supposed to be 5/4, now it's 7/6) so I am trying to be healthier beforehand!

We just barbecued chicken sandwiches to-go. Really hits the spot.

Happy anniversary, Lodestar! Loved your post.

I’ve made lemonade from lemons and made Margot a better dinner than the old folks are having. I had 4 oz of dry spaghetti and a half box of baby spinach heading for the dark side, and garlic, and a few beautiful mushrooms, so I made a puréed spinach sauce for the spaghetti. Any parents out there will notice that there should be plenty left for mom to sample, but Dad is stuck with leftover chicken salad.

Mexican Stuffed Multi colored bell peppers with Jack cheese. Grilled sweet corn, with sweet cilantro lime butter.

Jacima lime slaw. Citrus, berry and banana salad.

Oh I am so glad! Next time you buy a knoor sauce packet try the parma Rosa sauce. I know they sell it online. It's good too.

Wing special at a local place. Ten jumbo bone-in wings in a garlicky Cajun sauce and baked beans for $10.
