Last night, took some cauliflower, white onion, sweet banana peppers, red bell pepper, mushrooms, and chickpeas, seasoned them with cumin, curry, salt and pepper and roasted them on the grill, then served that on top of some quinoa and baby kale. And of course, drizzled it all with sriracha.

Made something so delicious for dessert today. I mixed St. Dalfour's strawberry jam with my plain Greek yogurt with organic coconut sugar. The heavens opened.

You can do so much with greek yogurt. Mix it with sugar free cheesecake pudding mix... omg. So good. Or just a sweetener of your choice, vanilla and lemon juice... tastes like cheesecake.

Ooh thanks for those ideas! I make yogurt in the InstantPot then strain it and add vanilla and honey but I think I’m ready for more flavors.

Tonight we are having fish tacos and a Mediterranean salad.
