This week's dinner selections will include, among other things, getting creative with the Christmas leftovers (chicken enchiladas, beef tenderloin, and shrimp). I'll probably slice up the beef for some possible tacos unless I decide, instead, to use onion gravy. With the chicken enchilada leftovers, I'd like to try to incorporate some refrieds and possibly some guacamole. Other plans I have for the coming week are pork chops and lasagna.

Pinto bean with chopped green chiles and onions, green chile cornbread, homemade baked mac and cheese and a tall glass of iced tea to wash it all down with.

Chips, homemade salsa and guacamole will go to work with me tonight.

I made a pot of homemade sauce and meatballs.. over whole wheat bow ties! And garlic toast.

Sounds like Italian night. I made 2 huge pots of sauce. One with meat and one with veggies. Tomorrow I am making 2 big pans of lasagna. Tonight I just had to try the sauce, lol.

Rigatoni and meat sauce for hubby and veggie sauce for me.
