So I took the day off from work to work?? Doesn't make much sense but anyhow we are having a new baked chicken of my own invention so I shall report on it tomorrow. With the chicken I will serve mashed potatoes and corn or green beans--not sure yet!

I just picked the first Brandywine tomato of the season, and together with fresh mozzarella and homegrown basil I'll serve the first homemade Insalata Caprese of 2010.

Cheeseburger Pie - easiest thing in the world. I first had it when I was 12 years old, at a friend's house. The original receipe was slightly more complicated, but through the years, I have forgotten it, and have also simplified the ingredients to satisfy my kids.
I use 2 Pillsbury Pie Crusts
Brown 1 lb. ground beef using your favorite seasonings. I use Lawry's garlic powder and pepper. The original recipe called for sauteeing onions, a little cleery and a little garlic, then browning the ground beef, and then thickening the mixture with a little flour.
Put one layer of the beef mixture in the bottom pie crust. Cover with a layer of shredded cheese. I like to use a blend of cheddar and mozzarella (or jack). Repeat.
Add the top pie crust, putting the 4 holes at the top for ventilation.
Bake at 350 degrees for 30 minutes, until crust is golden brown.
IS THAT NOT THE EASIEST (AND MOST SCRUMPTIOUS) RECIPE EVER?
Not sure about tonight. DH wants to take the kids out for burgers , but I have thawed stew meat ready for a quick beef stew. But ... I'm still at the office and not even home yet ... the burgers may win for them tonight (I'm doing P90X, so no burgers for me (DH is doing the program and should not have one either )).
