So, the sign at the Post Office in Kilmer Road in Edison NJ actually states:

Northern New Jersey District Office
Edison, NJ

What does that mean? Would that make Edison more defined as Northern not Central?

Nope. USPS doesnt believe in Central NJ. They have a Northern NJ district and a Southern NJ district.

Even if there is a Central Jersey, I would place Edison firmly in North Jersey. It's at the same latitude as south Staten Island.
