I hate it when the turkey breast is done before the thighs. Even a heavy tent of foil sometimes doesn't stop the breast from drying out before the thighs are done.

Long ago, my grammy told me how to solve this. She told me to let the turkey sit out on the counter to bring it to room temperature, however, when you do this, put plastic bags filled with ice on both sides of the breast. This takes the temperature down on the breast but lets the thighs (which take longer) to be at room temperature. By icing the breast, it allows both the breast and the dark meat to cook more evenly. What ever happened too the cranberry & orange compote it was very big years ago. I would mix crushed walnuts into it and it made a great side with the bird.

Flipping the Bird... Yes according too American Test Kitchen today.. "You Flip the Bird "

Taking time & temperature & weight of Bird.. Flip the bird Breast side down..cook with foil tent about 75% -- %80 of time. Using a muslin bag with 1/3 of your stuffing inside of bird just stuffing nothing else. After cooking for the 75% -- %80 of the time pull bird out.. and Flip the Bird.. breast side up.. pull the muslin bag out of bird. re-tent bird and finish cooking with breast side up. 160 degrees in deepest portion of Breast is done let rest for 1/2 hour before carving tent too keep warm. Take the 1/3 of stuffing from muslin bag that was in bird.. mix with the remaining 2/3 of stuffing mix.. using chicken broth - 1 egg white - salt - pepper. They added dried cranberries & crushed walnuts.. mix.. not dry -- not soupy.. damp wet. Then bake till golden brown on top.

My son will be joining us for dinner...wonder if he is gonna pull and eat and run deal?He's not into family holidays.

It is now official. Any turkey that might have been heading my way has been granted a pardon. However a couple Alaskan Red King Crabs have not fared as well. Now all I have to do is resist the temptation to repeatedly sample the crab before Thanksgiving.
