Well it's because you people can dish it out but can't take it. If you want to deny service to gays, liberals, and other "sinners" and people you hate you have to accept that some businesses are going to do the same thing to you.
Sounds like a bad business model but considering the location he will likely get tons of patrons due to his virtue signaling. He should put a sign in the window though so people who do not have hats but disagree with his intolerance can avoid giving him $. The area is a large tourist destination. I am all for people having their intolerance on full display so I can make an informed decision.
Their restaurant, their rules. Nothing wrong with expressing your opinion about it though. It may or may not be a good business decision depending on what part of the country the establishment is in.
Let's say a Neo-Nazi walks into your restaurant, do you serve him? Let's a pedophile, do you serve him? Let's say a wife beater, do you serve him? Let's say a member of Isis, do you serve him?
How are any of these the same thing as someone wearing a hat? Are owners supposed to run every one through a sex registry check before serving them? It's one thing if someone has been in the news lately for being any of the things you list, but the subject at hand was head wear.
Interesting, it was not that long ago that the left was saying that restaurants cannot refuse to serve anyone. The people full of hate continues to be the left.

Let's say they're wearing a hat with a swastika, or a hat with NAMBLA on it, or something else? Hats are symbols, symbols for what you believe in often times.
The point is, I'm trying to get you to empathize with the owner. TBH, I think he's misguided, but we all have our breaking points. There are some people we dislike so much we won't take their money.
