Was he involved in physical activities while on such a diet? What was his age during the time he was on this Twinkie diet? Fast metabolism. Individuals over a certain age have a slower metabolism. It just depends on the person. Some have slower, some have faster, and at different age groups.
His physical activity did not increase. Same level of activity as before he started on the diet.

Having roots in the rural South I think there is a food culture here based on historic poverty. Many people used to not have enough food so food giving and eating together became a main way of showing hospitality. Eating everything put in front of you makes sense when food supply is hit or miss. But when continued in a society with tons of cheap foods it leads to obesity. Same thing seems to be happening in Mexico, which is also historically poorer than northern North America.
Most Blacks in the North have recent Southern roots so that food culture was brought with them. Most African immigrants I've met are not obese.
