the label "white" is to separate the europeans from noneuropean caucasians. white is caucasian just as middle-easterners are caucasian. if anything, the label 'white' would correctly more denote loosely a type of ethnicity but that is not even applied honestly by racial characteristics but by based on european country or nationality.
I think the OP is speaking of skin color/complexion. While most Northern Europeans have light brown or blonde hair, light eyes, and a fair complexion Italians usually have olive skin, dark hair and dark eyes. I know a fella of Italian descent and if he tans a little, he looks Mexican.
Those color games are ridiculous. There are a lot of Arabs who are whiter than Germans. In my view white only means not clearly African or east Asian.
When one only has three drawers where for whatever reason one is supposed to put all humans into, naturally one would put Italians into the white drawer, not the black or yellow one Dark hair and skin don't matter much. When you live in a place where there is strong sunshine, you will get darker, at least after several generations.
