Explain to us why you care what other people are eating?
It's fine with me. They eat a plant based diet and it leaves more steak for me. Although, I enjoy plant based foods, too. You can't get much better than a fresh ripe peach straight off the tree.
Why do they categorically refuse to eat any animal food ingredients, and by no means make any exception?
Lots of people become obsessed with all kinds of ideologies.
Personally I avoid any animal food ingredients because they make me sick to my stomach. I do occasionally make exceptions as a practical or family matter (e.g. holiday meals), but usually regret it the next day as a practical matter.

When it’s merely a personal choice of the individual then it’s not a problem. The problem becomes when they try to force others to eat as they do. At that point it becomes like a cult. They become so obsessed with being vegan that they feel the need to convert others to their beliefs. In the early stages it’s like dealing with very religious people who always try to find a way to bring up their religion with others and try to get others to convert to their religion. Some vegans progress beyond this stage and become hardcore militant activist as seen by activist who harass customers at restaurants, supermarkets, and meat markets. At that point you could legitimately say it’s become a psychological problem.
They have a propensity to be radical and extreme in many other facets of their lives and want to lecture and preach to you in my experience. Not all, but many.
