Depends on what you are willing to pay, what sort of food you like, etc. The AVL offerings range from highly regarded tapas style Curate to Indian street food at Chai Pani to tacos, Californian, Appalachian, Brewpubs, etc.
The web can be very helpful in providing a starting point. Then come back and ask "What do you think, should I go to A or B?" There are several places most will warn you not of visit unless you like spending lots of money for ordinary food.

There are several cuisines in Asheville I could try. Let me take one at a time.

What Mexican restaurants in Asheville should I try?

For Mexican food not cali-mex or tex-mex visit - Taqueria Munoz at 1438 patton ave. They also have a store in Hendersonville .

Second best - Taqueria Fast Mexican food with the occasion cali-mex versions too at 175 Weaverville rd

For good Americanized tex-mex with far to much food

Papa's and Beer on tunnel rd

Are those places hole-in-the-wall spots that mainly cater to the Mexican worker population?

Agreed, Taqueria Munoz is the best I've been to in Asheville. Mary's Burritos in Hendersonville is excellent, but with a Salvadorian flair. The one in Mills River wasn't as good when I went, but may have been suffering from teething pains. Possibly better now, draws a good lunch crowd.

Papa's and Beer in Hendersonville should work on being cleaner. The Sol Y Luna in Laurel Park is tops (imo).
